酒莊：Château Canon

知名酒莊，為聖愛美濃產區列級第一特等之莊園，1997年後已是Chanel集團下的產業，以前只喝過Canon的二軍酒Clos Canon 1998及1999二個年份，帶有黑莓果、巧克力香氣，屬細緻型酒款，而今天的一軍酒，已經在酒櫃中陳放多時，與Zoé在2001年結婚，之後對於同年度酒款總有特別感覺，不知不覺便買了不少，這些年也喝了一些，不過對於波爾多好酒來說，還是要有耐心等待，而且等待通常是值得的。

此酒帶著赭紅寶石色澤，邊緣已略呈磚紅色，帶有藍莓、黑醋栗、巧克力、些許奶油香、松木、動物毛皮、溼泥土及蕈菇類香氣，香氣迷人、優雅，有著如置身於森林中的清涼感，中度至濃郁酒體，單寧已漸柔化，甜美，結構完整，酸度均衡，並沒有過度的木桶燻烤，餘味中等長度，甜美回甘，不是powerful的酒款，但沒有過度的木桶及酒精，是我喜愛的典型。

今天上Costco買了Choice級的沙朗牛肉來搭配，參考Thomas大大的方法烤牛排，牛肉甜美多汁，與今天的酒款也頗搭，不過也真是奢侈的享受。

Beautiful aromas of chocolate, berries, cherries and earth. Very complex and classy. Medium- to full-bodied, with very refined tannins and a long, fresh finish. A delicious, balanced red. Canon is clearly back on top and making excellent wines nearly every vintage. Best after 2008.

A distinctive, structured, mineral-infused, medium-bodied effort, the 2001 Canon exhibits notes of damp earth, sweet cherries, and spice, a firm structure, and very good purity. This is clearly an estate on the rebound. Anticipated maturity: 2005-2014.

80% Merlot, 20% Cabernet Franc. 53% of the crop selected for the grand vin. A serious wine and better than the 2000. Good, deep colour, a purety of fruit with blackcurrant notes, medium bodied, soft texture and long, firm finish. Ready 2008-2020.

保存的很好，沒有一絲滲漏，漂亮的軟木塞
